- 3 hard boiled eggs
- 1-2 teaspoons yellow mustard
- 2 tablespoons mayonnaise
- pinch of ground black pepper
- pickled jalapeño rings (I used La Costeña brand )
- Peel the eggs and cut in half length-wise. Pop the yolks out into a medium bowl.
- Mash with the mayo, mustard and pepper until smooth.
- Spoon into the egg white cavities.
- Decorate with pickled Jalapeños and srpinkle paprika!
